Things To Do With Strawberries

Another recipe from the book my mom gave me. It was really easy and amazingly tasty.

Any-day Skillet Cake
8 tbsp butter, softened
2 tbsp butter for melting in skillet
1 C sugar
2 eggs
1 C plain yogurt
1 tsp vanilla
2 C cake flour or 1 3/4 C all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/8 tsp cloves
About 1 C finely chopped strawberries or other fruit
2 tbsp sugar for topping

1. Preheat oven to 400.
2. Beat butter and sugar together in a medium bowl. Add eggs, yogurt and vanilla and beat for about 1 minute.
3. Place a 9 or 10 inch heavy oven-proof skillet over low heat. Add 2 tbsp butter and melt. Use a spatula to coat the sides with melted butter. Leave over low heat.
4. Combine dry ingredients in a large bowl and mix. Working quickly add the wet ingredients and mix. Use a spatula to scrape the batter into the warm skillet and smooth the top. Arrange the fruit on top leaving a 1-inch border around the outer edge. Sprinkle with sugar.
5. Place skillet in oven and lower temperature to 375. Bake for 35 minutes or until the toothpick test works.
6. Remove from oven and wait five minutes. Use a plate to flip the cake out and serve upsidedown with icing or flip it back upright to show the fruit.

Great blog, what kind of salsa is that in the photo on this page under the blue travel mug? Any chance of a recipe too?
