Corn and Salad

I can’t pretend to be a knowledgable gardener. Everything I know about vegetable gardening I absorbed from my mom, aunts and grandparents. Since I began researching winter gardening I have discovered a few new plants that are really interesting to me. I don’t think my mom ever grew these plants or I would probably know of their existance!!

The first of these is Corn Salad or Mache. See the Wikipedia page for particulars and taxonomy.

Apparently the leaves have a slight corn taste. It needs absolutely no cover in the winter and can be continually havested. Best of all it can be interplanted with mature summer crops. I have ordered seeds from Full Circle Seeds and I hope to get a good crop this winter. My ultimate goal for winter gardening is to reduce my dependance on overpriced Californain produce and eat some food with actual nutrient value. A lofty goal but something I feel very strongly about.

(Secretly I am hoping that the plants will sprout little cobs of corn like the ones that come in a can.)

but your grandfather grew corn salad ’cause he was at one time an “experimental” gardener.
